There were probably quite a few Maiar with Eönwë as you say to deal with the balrogs and Morgoth himself, but to my understanding he was already significantly weakened at this stage because of the marring of Arda (even Fingolfin did quite well in one on one combat, so I think a few strong Maiar could have done the job).

Yep, you got it right. The accretion disk is actually really flat. Those images are produced in simulations that take into account the curved (and very complex) paths light takes in the vicinity of a black hole. These images really depend on the angle between the line of sight and the disk.
